…Vanya Cullen, Cullen Wines

Vanya is warm and friendly when welcoming visitors on her estate that she has turned into one of Australia’s premium boutique wineries. Cullen Wines is committed to biodynamic viticulture and has evolved into an iconic winery focused on quality, integrity and sustainability at all levels of the business, with Vanya at its head.

Most of her life, Vanya has been working on her parents’ farm who started the wine growing business on Wilyabrup Estate in 1966 when a trial acre of vines was planted by Dr Kevin and Diana Cullen. This soon proved a success and another 18 acres of vines were planted on the sheep and cattle farm in 1971, including their first Cabernet Sauvignon vines. Sauvignon Blanc, Chardonnay, Semillon, Merlot and Cabernet Franc followed.

Vanya started winemaking in 1983 at her parents' estate where she was then appointed Chief Winemaker in 1989 and Managing Director in 1999. During that time she has been rigorously experimenting in the vineyard (especially with soil and trellis management) and in the winery all the while looking to give her wines greater complexity.

Over the past decade, Vanya has transformed her family firm from one of Margaret River’s best into one of the country’s premium boutique wineries. Cullen Wines while remaining family owned has since evolved making quality wine from a certified Biodynamic, Carbon Neutral and naturally powered estate. Exemplary viticulture lies at the heart of her success but so, too, do care and thorough attention to detail in the winery.

Vanya Cullen, as the first Western Australian and the first women, was the winner of the 2000 Qantas/The Wine Magazine Winemaker of the year award. In 2008, she was awarded the UK Drinks Business Magazine “Woman of the Year 2008” and in 2011 the “Green Personality of the Year” for her commitment to the wine industry and for demonstrating that you can operate a successful business while looking after the environment.

Kytren Goats Cheese with Cullen Chardonnay block honey, organic hazelnuts, chia and sesame seed crisps, sautéed mushrooms and mizuna salad

Recipe by Cullen Wines Executive Chef David Hull

Ingredients (for 2):
116g goat’s cheese
¼ tbsp honey
83ml whipping cream
½ fresh shitake mushrooms
16g quinoa
8g chia seeds
1g sesame seeds
11g water
6g butter
1 shallot
fresh mizuna/salad leaves
6g hazelnuts, toasted and roughly chopped

Method:
Whip the cream, goat’s cheese and honey together until light and fluffy, place into the fridge to set.

Preheat the oven to 180°C.

For the crisps, blitz the quinoa, chia seeds and sesame seeds in a food processor, add 11g water to make a stiff dough (you can add more water if your dough is a little dry).

Place the dough between two sheets of baking paper and roll out until approximately 3mm thick. Cut out small circles using a cutter (2-3cm in diameter). Place onto a lined baking tray and bake for 5 minutes or until golden.
Finely dice the shallot and slice the mushrooms. In a hot pan melt the butter, add the diced shallot and cook for 1-2 minutes. Add the mushrooms and cook for another 2 minutes, season with salt and pepper and set aside.

Toast the hazelnuts for 3 minutes at 180 degrees, remove from the oven and roughly chop, set aside.

To assemble:
Warm the mushrooms in a frying pan for 1 minute. Place them into a bowl along with the salad leaves and mix together, place onto a plate.

Quenelle (scoop) the goat’s cheese and place onto the top of the salad. Sprinkle over the hazelnuts.

Place the chia and sesame crisps on to the top of the salad and squeeze a little lemon juice over the salad.

Enjoy!
